Ingredients
- 4 cup, diced red Potatoes
- 2 tbsp dijon mustard
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- ½ tsp, ground white Pepper
- ½ whole red onion, diced
Directions
- Wash the potatoes thoroughly and cut them into small cubes. Place in a saucepan, cover with water and bring to a boil. Cook until just tender, 10-15 min. (Do not overcook; keep firm.) Drain, rinse, drain again, and let cool.
- Mix the mustard, vinegar, oil, pepper, and onion in a large bowl. Add the potatoes and toss gently to coat. Cover and refrigerate. Serve cold.
