Vegetarian Burger

Ingredients

  • 2 clove garlic, minced
  • ¾ cup onion, finely chopped
  • 2 cup cooked brown rice
  • ¾ tbsp white beans
  • ¾ cup black beans drained and rinsed
  • ¾ whole beets, boiled
  • 4 leaf outer romaine lettuce
  • 4 serving hamburger bun
  • ½ large whole (3" dia) tomatoes, sliced
  • ½ cup of rice flour
  • 1 thousand island dressing to taste

Directions

 
  1. Sauté garlic and onions on low to medium heat until onions become translucent.
  2. In a large bowl, mix together cooked brown rice, onion mixture, beans, corn, and dill. Add rice flour as needed to soak up extra moisture and bring the ingredients together.
  3. Add pureed beets to the rice mixture, incorporating well. Form four burger patties with your hands.
  4. Place patties on a hot pan or grill, cooking for a few minutes on each side until cooked through and slightly golden brown on each side. Serve with Thousand Island dressing, tomato, lettuce, and bun, if desired.
