Tempeh Lettuce Wraps

Ingredients

  • 1 cup tempeh
  • ½ medium (approx 2-3/4" long, 2-1/2 dia.) red bell pepper, sliced
  • ½ whole onion, sliced
  • 1 Tbsp garlic, chopped
  • 1 tbsp olive oil
  • 1 tbsp light soy sauce
  • 1 tsp ginger, powdered
  • 1 tsp onion powder
  • 1 Tbsp garlic, chopped
  • 1 head (5" dia) lettuce (butterhead)

Directions

 
  1. Heat olive and garlic in a large pan over medium heat.
  2. Add onion, tempeh, and bell pepper and saute for 3 minutes.
  3. Add soy sauce and spices and cook for another 2 minutes.
  4. Spoon mixture into lettuce leaves.
