Post-Workout Sweet Potato Brownies

Ingredients

  • 2 whole sweet potato
  • ½ cup quinoa flour
  • 1 whole zucchini, sliced
  • ½ cup cocoa powder, unsweetened
  • 1½ tsp baking powder
  • 2 egg
  • 3 egg whites
  • ⅓ cup honey

Directions

 
  1. Preheat oven to 415 F.
  2. Bake potatoes for approximately one hour, or until they're soft. Allow cooling to room temperature.
  3. Preheat oven to 350 F.
  4. Mash sweet potatoes into a large mixing bowl. Add all remaining ingredients and mix thoroughly.
  5. Evenly divide batter into a muffin pan. Bake for 30 minutes, or until a toothpick inserted into brownies comes out clean.
